Welcome to The Bakehouse Texas

The Bakehouse Texas is a monthly pop-up bakery from Joy Wilson (aka Joy the Baker), longtime baker, cookbook author, and recipe developer behind joythebaker.com. Baked from the garage workshop and backyard cottage kitchen of Joy’s big, slightly leaning 1888 Victorian home in Bellville, Texas, the Bakehouse is a small-town, small-batch bakery built around really good butter, seasonal ingredients, and the joy of handing someone something delicious in a paper bag.

After a maternity-leave intermission, we’re firing up the ovens again! The Bakehouse Texas returns Saturday, September 5th — and we’re changing things up a bit. No preorders this time around. Just come hungry.

Saturday, October 3rd

  • 9am–noon — or until we sell out and we do seem to sell out!
  • 310 E Palm St., Bellville, Texas
  • Find the big, leaning Victorian house and enter through the side driveway into the backyard.
  • Everything is first come, first served, so come early for the fullest selection. 
  • Cash and Venmo accepted. Credit cards accepted with a small processing fee.
  • Bring your own mug and we’ll fill it with complimentary coffee from our friends at Bellville’s own Interstellar Coffee.

On the October Menu

The Bakehouse Texas Chocolate Chip Cookies $5 each
Our signature BIG bakery-style cookie: golden at the edges, gooey through the middle, and absolutely loaded with dark and milk chocolate.

Apple Pie Biscuit Jammers $5 each
Big, buttery buttermilk biscuits with a bubbling pocket of caramely apple filling baked right into the center.

Sticky Pecan Banana Bread $5 each
Tender banana bread topped with a buttery, caramelized pecan layer that makes the whole slice feel just a little extra.

Loaded Baked Potato Quiche $6 per slice
A rich, savory quiche packed with butter-roasted potato, sharp cheddar, crisp bacon,scallions, and a side of sour cream.

Pumpkin Butter Cinnamon Rolls $6 each, limit 2 please 
Soft, swirled cinnamon rolls layered with housemade pumpkin butter and warm spice, then baked until golden and gooey.

Giant Sprinkled Snickerdoodles $5 each
Big, soft-centered snickerdoodles rolled in cinnamon sugar and festive all-natural sprinkles for a little extra joy.
